Toward the end of the broadcast, Cassie made an ice cream pie that's absolutely TO DIE FOR.  She promised you the recipe . . .and here it is! Enjoy! (For the live demo, click HERE and go to to the 54-minute mark.) 😄

Cassie's Ice Cream Pie

Ingredients
  • 1 stick of butter (8 Tbsp.)
  • 1 cup brown sugar, firmly packed
  • 3 cups corn flakes cereal
  • 1 cup sweetened coconut flakes
  • 1 cup nuts (optional)
  • 1 half gallon of ice cream (softened a little so you can easily scoop it out)
Directions
  1. Grease a pie dish with the stick of butter.
  2. After greasing your dish, melt the stick of butter.
  3. Mix the brown sugar into the butter until it's all incorporated.
  4. Put the corn flakes in a zipped plastic bag and smash it up a little. (It's not an exact science, just scrunch it several times with your hands until the pieces are smaller.)
  5. Add the coconut flakes and nuts to the corn flakes, mix it all together, and then dump it into the butter/brown sugar mixture.
  6. Mix everything together. If using unsalted butter, add a dash of salt!
  7. Use half of the mixture to form a crust along the bottom of the pie dish. 
  8. Scoop the ice cream onto the crust, then top with the remaining mixture.
  9. Stick your pie in the freezer so it sets . . .then enjoy!

This pie is easier to cut and serve fresh out of the freezer. The longer it melts, the harder it is to serve.

Notes

Be sure to Experience the Joy of Creativity® with this recipe! In other words, it's VERY substitute friendly.

Feel free to swap some of the corn flakes for a different crunchy ingredient such as Biscoff or shortbread cookies, a different cereal, pretzels . . .the list goes on!

If you don't like coconut or nuts, don't add them. You can also add whipped cream, fresh fruit, chopped candy, Magic Shell, or anything else you find delightfully tasty!
