Cassie's Berry Lemonade Whip & Cherry Cute Caprese Stackers

I was fortunate enough to make and sample these recipes firsthand and I've gotta tell you . . .they do NOT disappoint! I can't wait to make them again and again because they are SO good.

Berry Lemonade Whip
This refreshing drink is fancy, fun, and super easy to make! Be creative with your berry choices and for extra flair, try frosting your Mason jars beforehand.
Ingredients
- 1 cup fresh berries
- 1/2 cup whipping cream (You can sweeten with sugar or vanilla extract if you'd like!)
- Your favorite lemonade
- Sugar (to taste, if needed)
- Mason jars for extra cuteness
Directions
- Wash and cut berries. (If using strawberries, cut into small pieces.)
- Divide berries in half, putting each into separate Mason jars.
- Muddle the berries in the bottom of the jar, taking care to make sure no large chunks remain. (If you don't have a muddler, use the back of a spoon to press berries into the side of the glass to release juice.)
- Add sugar to berries (if desired) for taste.
- After smashing the berries to release as much juice as possible, take a generous scoop from each glass and add to mixing bowl with whipping cream. Whip until foamy and put aside.
- Add lemonade to each Mason jar, filling to the top.
- Carefully spoon whipped cream mixture on top of each jar.
- Garnish with cut berries or lemon slices.
- Serve immediately and enjoy!
Note: To make this drink extra refreshing, add frozen berries or lemon slices before topping the lemonade with the whipped cream mixture. You can also substitute the lemonade for limeade or sparkling water!

Cherry Cute Caprese Stackers
This dish shines with fresh ingredients! For an extra wow factor, use tomatoes and basil from the garden or freshly baked bread. (This is my favorite summer snack! And the whole cherry look? DARLING!)
Ingredients
- Skinny baguette, sliced
- Mozzarella cheese, sliced
- Cherry tomatoes (or other small tomato variety)
- Fresh basil (You'll need both stems and leaves!)
- Extra virgin olive oil
- Balsamic glaze
- Salt
- Lemon
- Pepper
Directions
- Wash and dry the tomatoes and basil.
- Cut the tomatoes in halves.
- Cover the bottom of a small dish with a thin layer of salt. Add pepper if desired.
- Using a pie dish or other flat-bottomed dish, pour and spread extra virgin olive oil, coating until the entire bottom is coated in a thin layer.
- Generously squeeze a fresh lemon into the oil, then drizzle balsamic glaze to your liking.
- Stir the oil, lemon juice, and balsamic glaze together until evenly distributed throughout the pan.
- Gently dip the open side of the tomato into the salt, then place face down into the oil mixture.
- Repeat until all tomatoes are in the dressing, then add slices of mozzarella cheese.
- Let the tomatoes and cheese soak in the oil/lemon/balsamic sauce.
- Slice and toast the baguette bread.
- Put a piece of mozzarella cheese on each slice.
- Arrange the tomatoes to resemble cherries, using the basil for the leaves and stems.
- Serve immediately. YUM.
Note: To incorporate more tomatoes or more basil per bite, add thin slices of tomato and/or basil leaves under the mozzarella slice.
