Lemon Cookie Recipe

What's the point of oven mitts and hot pads without a delicious recipe to use them with? These decadent cookies melt in your mouth and are easy to make in Carol’s Kitchen (AND your kitchen)! 

Cookie Ingredients
  • 1 cup butter, softened 
  • ⅓ cup powdered sugar
  • ⅔ cup cornstarch
  • 1 cup flour
Cookie Directions
  1. Preheat oven to 325 degrees.
  2. Cream butter and sugar until light.
  3. Whisk cornstarch and flour, then add butter mixture and blend thoroughly.
  4. Drop by teaspoonfuls onto an ungreased cookie sheet and bake for 15-20 minutes. (Do not overbake.)
  5. Use your Carol's Kitchen oven mitts to take the tray out of your oven. 😀
  6. Cool completely, then frost. 
Frosting Ingredients
  • 4 tbsp. butter, softened
  • 2 cups powdered sugar
  • 2 tbsp. fresh lemon juice
  • Lemon zest to taste 
Frosting Directions
  1.  Cream the butter.
  2. Beat in the sugar alternately with the lemon juice and zest, beginning and ending with the sugar.
  3. Spread frosting on cookies.
