This whole project only takes 2-3 hours and is perfect for a Mother's Day brunch.
Abby's Mother's Day Scones
Scone Ingredients
- ⅓ cup sugar
- 2 cups flour
- 1 ½ tsp. baking powder
- ½ tsp. salt
- 8 Tbsp. unsalted butter (frozen)
- Lemon zest from two medium-sized lemons
- ½ cup plus 2 Tbsp. sour cream
- 1 large egg
- 1 teaspoon vanilla extract (the real stuff)
- ⅔ cups fresh raspberries
Scone Directions
- Preheat oven to 400.
- Line a baking sheet with parchment paper.
- In a bowl, combine sugar and lemon zest. Mix with fingers until the sugar is moistened.
- Add the flour, baking powder, and salt and mix until combined.
- Using the large holes of a box grater, grate butter into the flour mixture. Use a fork to work in the butter until it resembles coarse meal.
- In a small bowl, whisk sour cream, egg, and vanilla until smooth.
- Using a fork, stir the sour cream mixture into the flour mixture until dough starts to form.
- Gently fold in raspberries.
- Use your hands to press into a ball. (Dough will be sticky at first.)
- Place dough on a lightly-floured surface and pat into a 7” by ¾” disk.
- Use a knife to cut into eight triangles, then place on baking sheet 1” apart.
- Bake at 400 until golden (15-17 minutes).
- While the scones are cooling, prepare the glaze.
Glaze Ingredients
- 3 Tbsp. butter (melted)
- 1 cup powdered sugar (sifted)
- ½ tsp. vanilla extract (Again, the good stuff)
- 2 Tbsp. fresh lemon juice
Glaze Directions
- Prepare glaze by mixing melted butter, powdered sugar, vanilla, and lemon juice. Whisk until smooth.
- Drizzle the glaze on top of the scones and allow to harden.
