Abby's Mother's Day Scones

Scone Ingredients
  • ⅓ cup sugar
  • 2 cups flour
  • 1 ½ tsp. baking powder
  • ½ tsp. salt
  • 8 Tbsp. unsalted butter (frozen)
  • Lemon zest from two medium-sized lemons
  • ½ cup  plus 2 Tbsp. sour cream
  • 1 large egg
  • 1 teaspoon vanilla extract (the real stuff)
  •  cups fresh raspberries
Scone Directions
  1. Preheat oven to 400.
  2. Line a baking sheet with parchment paper.
  3. In a bowl, combine sugar and lemon zest. Mix with fingers until the sugar is moistened.
  4. Add the flour, baking powder, and salt and mix until combined.
  5. Using the large holes of a box grater, grate butter into the flour mixture. Use a fork to work in the butter until it resembles coarse meal.
  6. In a small bowl, whisk sour cream, egg, and vanilla until smooth.
  7. Using a fork, stir the sour cream mixture into the flour mixture until dough starts to form.
  8. Gently fold in raspberries. 
  9. Use your hands to press into a ball. (Dough will be sticky at first.)
  10. Place dough on a lightly-floured surface and pat into a 7” by ¾” disk.
  11. Use a knife to cut into eight triangles, then place on baking sheet 1” apart.
  12. Bake at 400 until golden (15-17 minutes).  
  13. While the scones are cooling, prepare the glaze.
Glaze Ingredients
  • 3 Tbsp. butter (melted)
  • 1 cup powdered sugar (sifted)
  • ½ tsp. vanilla extract (Again, the good stuff)
  • 2 Tbsp. fresh lemon juice
Glaze Directions
  1. Prepare glaze by mixing melted butter, powdered sugar, vanilla, and lemon juice. Whisk until smooth.
  2. Drizzle the glaze on top of the scones and allow to harden.
