Shout Hooray! Mother's Day Muffins
Muffin Ingredients
- 1 3/4 cups flour
- 2 3/4 tsp. baking powder
- 3/4 tsp. salt
- 1/2 cup granulated sugar
- 2 tsp. lemon zest
- 1 egg
- 3/4 cup buttermilk
- 1/3 cup oil
- 1 cup frozen blueberries
- 1 tbsp. flour
- 1 tbsp. sugar
Streusel Ingredients
- 1/4 cup sugar
- 2 1/2 tbsp. flour
- 1/2 tsp. cinnamon
- 1 1/2 tbsp. butter
Directions
- Preheat oven to 400 degrees. Line a muffin tin with cupcake liners and set aside.
- Spoon the flour into measuring cups and level with a knife.
- In a large bowl, combine the flour with baking powder, salt, sugar, and lemon zest.
- In a smaller bowl, whisk together the egg, buttermilk, and oil. Add to dry ingredients and stir just until moistened.

In another small bowl, combine the remaining flour and sugar (1 tbsp. of each). Add the frozen blueberries and mix until they're well coated.

Gently fold the blueberry mixture into the batter, then spoon into the lined muffin tins. (Fill 2/3 full.)
- Now it's time to make the streusal topping! Combine 1/4 cup sugar, 2 1/2 Tbsp. flour, and 1/2 tsp. cinnamon. Cut in 1 1/2 Tbsp. of butter into the mixture until it's nice and crumbly. Sprinkle over the batter in the muffin tin.
- Bake for 18-20 minutes or until tops are golden and toothpick comes out clean.
- Remove from oven and cool in pan for five minutes.
