Autumn is here and in full swing! 🍂 And to celebrate, here's one of my family's favorite fall desserts, now renamed in honor of Kimberbell's Pumpkins & Potions Ladder Quilt!
Pumpkins & Potions Cake Roll
Cake Ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup canned pumpkin
- 1 tsp. lemon juice
- 3/4 cup flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. ginger
- 1/2 tsp. salt
- 1 cup crushed nuts (optional . . .I use cashews)
Filling Ingredients
- 1 cup powdered sugar
- 6 oz. softened cream cheese
- 4 Tbsp. softened butter
- 1/2 tsp. vanilla
Directions
- Beat eggs at high speed for 3 minutes, then gradually beat in sugar.
- Stir in pumpkin and lemon juice.
- Whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt, then fold into pumpkin mixture.
- Spread into a greased and floured jelly roll pan. Sprinkle nuts on top.
- Bake at 375 degrees for 15 minutes. then turn out onto dishtowel sprinkled with powdered sugar.
- Roll up with dishtowel and cool.
- When cool, spread with filling and roll back up!
