Kimberbell's Luck o' the Gnome Legumes (a.k.a. "Mushy Peas") Recipe for St. Patrick's Day is Culinary Gold!

 

 

I know, I know, I know...“Mushy Peas” sounds a little strange to the average American. But as our British, Irish, and Australian friends can attest, they are absolutely DELICIOUS. Eat them with fish and chips, a leg of lamb, or atop a meat pie and you’ll feel you've struck gold! Culinary gold. 

Please enjoy these tasty legumes, named for Kimberbell's Luck o' the Gnome St. Patrick's Day Bench Pillow for sewing and machine embroidery. Happy St. Patrick's Day!

Ingredients

8 oz. dried split peas
½ tsp. baking soda
3 ½ cups. boiling water
1 pinch sugar
Butter, salt, and pepper to taste

Directions

  1. Put the peas in a bowl, add baking soda, pour on the boiling water, and soak either overnight (if you’re eating them in the morning) or all day (if you’re eating them in the evening).
  2. Drain the peas, then barely cover them with water.
  3. Bring to a boil and simmer until tender and soft (approximately 15-20 minutes)
  4. Drain the peas, then add salt, pepper, a pinch of sugar and some butter. Stir and serve!
