"Hoppy" Easter Carrot Cake
I believe in cake. Specifically, I believe in cake made with yummy ingredients. Forget that boxed mix from the store, thank you very much, and give me a cake with substance!
This recipe was named for Kimberbell's Hoppy Easter Bench Pillow. I hope you enjoy it as much as I do!
Cake Ingredients
- 2 cups grated raw carrots
- 2 cups sugar
- 3 cups flour
- 1 ½ cups oil
- 1 ½ cups chopped nuts
- ½ cup coconut
- 1 small can crushed pineapple and juice (1 cup)
- 3 eggs
- 2 tbsp orange zest
- 2 tsp soda
- 2 tsp vanilla
- ½ tsp salt
- 1 tsp cinnamon
Cake Directions
- Mix all of the above ingredients (Mixing wet ingredients first and then adding the dry.)
- Bake in a 9x13 pan at 350 degrees for one hour.
- Cool and frost.
Frosting Ingredients
- ½ cube butter
- 4 oz. cream cheese
- 3 tsp vanilla
- 2 cups powdered sugar
- 1 ½ cups ground raisins
Frosting Directions
- Cream butter, cheese, and vanilla.
- Add sugar and mix well.
- Add ground raisins and spread on cooled cake!
- Eat and feel "hoppy" from head to foot.
