“Hoppy Easter” Carrot Cake

I believe in cake. Specifically, I believe in cake made with yummy ingredients. Forget that boxed mix from the store, thank you very much, and give me a cake with substance! I got this recipe from my Aunt Geri (who actually wasn’t really my aunt but the only thing you really need to know about her,  if you “carrot” all, is that she made one heck of a cake). Anyway, I’m happy to share the recipe with you! I know that my Easters are certainly a lot “hoppier” when I eat it.

 

Cake Ingredients

2 cups grated raw carrots

2 cups sugar

3 cups flour

1 ½ cups oil

1 ½ cups chopped nuts

½ cup coconut

1 small can crushed pineapple and juice (1 cup)

3 eggs

2 tbsp orange zest

2 tsp soda

2 tsp vanilla

½ tsp salt

1 tsp cinnamon

 

Directions

Mix all of the above ingredients (I do generally separate wet and dry ingredients first) and bake at 350 degrees for one hour. Cool and frost.

 

Frosting

½ cube butter

4 oz. cream cheese

3 tsp vanilla

2 cups powdered sugar

1 ½ cups ground raisins

Cream butter, cheese, and vanilla. Add sugar and mix well. Add raisins and spread on cooled cake!
