Falling for Autumn Comfort Soup

Who loves a good bowl of soup on a chilly autumn evening? I thought I'd share one of my favorites!

This soup is  delicious and you can be soup-er creative with the ingredients . . .much like you can with the darling designs from Kimberbell's Falling for Autumn quilt. 

Falling for Autumn Comfort Soup

This creamy soup base is delicious for your favorite veggies, including cauliflower, broccoli, carrots, celery, potatoes, and more! (You can even add a little bacon or ham.) 😊

Ingredients

4 Tbsp. butter
1/2 cup flour
2 cups Half & Half (or canned milk)
3 oz. cream cheese
4 cups milk
1 1/2 tsp. salt
1 tsp. pepper
Grated cheese (optional)
Whatever veggies you'd like!

Directions
  1. In a heavy saucepan, melt butter and stir in flour until roux forms.
  2. Add Half & Half, cream cheese, and milk (do not boil). Whisk until well blended.
  3. Cook whatever vegetables you've chosen (sometimes I just use a California mix of carrots, cauliflower, and broccoli) and then combine with the sauce.
  4. Salt and pepper to taste and garnish with grated cheese.
  5. Enjoy!
