Lovely and lemony, these darling little cookies melt in your mouth like butter on a hot summer day. (And speaking of butter, do not worry one bit about how much butter is in this recipe. Butter is a natural substance. Butter is the color of sunshine. Butter provides nutrients. Butter is bliss.)
1 cup butter, softened
⅓ cup powdered sugar
⅔ cup cornstarch
1 cup flour
Cookie Directions:
Frosting Ingredients:
4 tbsp. butter, softened
2 cups powdered sugar
2 tbsp. fresh lemon juice
Lemon zest to taste
Frosting Directions:
Cream the butter. Beat in the sugar alternately with the lemon juice (“Squeeze the day!”) and zest (“You’re the zest!”), beginning and ending with the sugar. Spread frosting on cookies.
WARNING: Partaking these cookies may cause symptoms of euphoria, including (but not limited to) extreme bursts of happiness, a sudden feeling of well-being, and the hearing of angels singing.
